I don't think that sort of control is possible with Java, primarily because it uses a VM and is shielded from the OS. Or rather the OS is shielded from the Java VM. This is by design.

For real-time protection, the application would have to run at the OS core, hooking into the file system. On a Windows platform, I don't see how this could be accomplished. On *nix system, this also...
