It looks like the write() method will write out to a file the contents of a Document where the Font etc has been set.

Did you find any third party packages that write rtf files? Does the Apache project do it?
EDIT: I just did a search and found this Java SE class: RTFEditorKit

I don't know that the java se classes write rtf control characters. There are third party packages that might do what you want.
Have you done an Internet search?
